Utilising a mix of modern and traditional cooking techniques, Pete draws on 15 years of experience and a love of Italian and Middle Eastern cuisine, to combine familiar ingredients with exotic flair, producing a truly original style. Growing up in the Southern Highlands, Pete has an enduring love for the region and innate understanding of the quality of local produce.
